Kitchen floor help!

We're in the final stages of planning our new kitchen. The floor!
It's a period 1920s/30s property but the kitchen is an extension lacking any period details.
We're installing a shaker style kitchen. Light grey on the wall cabinets with a rich turquoise blue/green island. White quartz counter. Antique brass handles.
Paint colour for the walls, somewhere on the scale of white -off white - skimming stone. To blend with the rest of the house. (We accessorise to add colour).
What flooring would you recommend?
My dream would be period mosaic tiles but the space is large so £££.
My husband doesn't want tiles at all. Says it's too "Spanish". Plus cold under foot (it's a south west facing room with 2 x french doors so it's toasty most of the year).
So, questions:
1. Best flooring option (tiles, LVT, LVP, engineered wood.. others?)
2. Colour?
3. Flooring before or after kitchen fitted (bear in mind the corner pantry!)?
Done with decision making at this point!
