Sloping garden with crumbling retaining wall. Help and advice needed.

I am buying a house that has a sloping garden which leads down to a slabbed area. The retaining wall is crumbling so needs replacing. I was wondering if this is something that I could do (I'm not a builder but am not afraid of physical work) or is this something that would need an expert? The first picture is my garden and the other pictures are ideas that I would like to replicate. Things that I have been wondering are:

Can I just remove the wall or will that cause a landslide?

Would sleepers be a good way of graduating the slope? If not, any recommendations?

If I do need to get the professionals in, what kind of price would I be needing to pay?

Any advice would be much appreciated as my wife thinks I couldn't do something like this and we all know that the wife is always right!
