We have counter height with a 12" overhang, and it's very comfortable to sit there. AT bar height you can go even a bit slimmer, maybe to 10". I have done 15" at a wall.
10” is the maximum allowable for an overhang in natural stone without additional support. The NKBA recommends 15” overhang for a 36” high counter. Otherwise, people sit dideways and occupy a lot more horizontal room. You will need to figure out support for your stone.
