Those cushions/pillows on the sofa were custom made by our work room after the client chose specific fabric.

That depends on the color you used for your dining/kitchen. Since you're in Ireland a warm orange or deep sunflower yellow would look cheery, but a fresh icy greyblue would look lovely when your kitchen is pale green. You can always go for tan, if you don't know (it's the most used neutral on this planet I guess).

If you enter green leather couch in Houzz pictures, you'll see lots of pictures...most will have a brown couch but lots of green in the room, so you'll be able to see different color combinations, style of rugs and pillows, etc. As above, your best bet is to select the rug, then the pillows. When adding pillows, use some solids and patterns for a nice look. Hard to provide specific suggestions without knowing your style.

Cornforth white is one of my go-to colours, matched with a Grey carpet will look stylish and chic. Pairing these with Blush tones and a muted metallic Chrome / Gold or Copper would look perfect. Gold and Brush Steel tend to stand the test of time so either would be a great addition. A bespoke Headboard would make this space elegant and mature.
