if you're not going to center the dining room table under the light, then I'd tend toward a flush or semi-flush fixture, to de-emphasize the alignment. You might want to remove the medallion from the ceiling too. As for the kitchen it looks like you have decent overall lighting -- maybe you're looking for a couple of pendants over the island? simple glass globes, maybe? here are a few styles to start you out.

Since you want a traditional look, that light in the dining room just will not do. How tall is the room? If it's sufficiently tall (it looks that way), you could look into a chandelier to replace the pendant in there now! My husband is the same! Just my opinion but as they're both chandeliers I'm not convinced it will work. Could you get a cheap light for by the woodburner? Either something hung lower than the chandelier or semi-flush in a different style. Maybe something contemporary as a contrast? I know that's not ideal re budget but you may be able to get a bargain in the sales. Do try just holding the light there though when the room is built and take a pic as i may be wrong..

Hello Debbie, Why not give a company like Opopsi a call.. They may be able to print something bespoke for you.. They also do canvases or Mural type.. I have not used them as yet but I think they could help.. I would say no to borders and maybe consider a wallpaper idea.. I think they do that too! Maybe you could even consider a more bespoke arrangement rather than lots and lots of photo's some could be overlapped or semi transparent so you get the effect of double exposures but with different images.. So it's more creative than a tile effect.. .. : ))
