Increase light to kitchen

I am looking to redo my kitchen space by moving the units to the other end of the room, and creating a small reading area (roughly where the sink is now). In an ideal world I would have doors opening up on to the garden at the rear, but there is a utility room there..which is extremely useful. I could remove it, but don't really want such a long rectangular kitchen, so I am looking to see how to get light through from the utility side of the wall- I'm thinking of moving the units in the utility and creating a floor to ceiling window, and then moving the doorway from the kitchen so that it would allow the light to flood in. Are there any better options that I am missing? Wondering if it is too much work for too little gain...
Ps I am also looking to have patio/bi-folding doors where the sink is now
