Kitchen extractor up old chimney?

I've got a client getting a new kitchen and an extractor is being built into the old fireplace, it was original envisioned to extract up the chimney (Which is lined and cowled as it used to be for an aga stove) but someone has at some point persuaded them it would be a bad idea due to condensation.

I'm no expert on these sorts of things though it was my idea, as it's what I'd do myself, but what do people think?

The chimney liner is steel at 200mm diameter and runs to about three stories. The chimney looks to have been cowled with a metal cover to stop rain coming back down but allow smoke out. The extractor has a 700m3/h flow.

My thinking is it should be OK as the chimney should naturally have a small draw at all times which should keep it clear, and the extractor should be just as easily able to vent up that then have to take a convoluted turn to get out sideways and maybe reduce the diameter? Possibly if instead of piping it straight up it could join in a T piece so condensation can travel down a separate weep hole/pipe and bypass the extractor unit?
