Definitely paint ceiling white!

I would keep the wood ceiling. think it's a great feature. But I do think then you shouldn't have wood floor as yes it would be too much wood. Not to get the woulds and woods mixed up!

What a great space.

Not sure how, but I feel it could be a wonderful, perhaps more contemporary room.

Unless you want to keep the ‘rustic’, traditional look, I’m not convinced you should go with timber look windows.

Some ‘inspiration’:

I’d get rid of all that ceiling timber altogether. Personally can’t see the point in having a sunroom and blocking off where the sun and light mainly enter the room. Granted most people have some sort of ceiling protection cover from the intense glare of the sun and in that respect have sail blinds or similar over a glass or polycarbonate roof.

It really makes the whole room look so dated. That then let’s you have the wooden herringbone effect you’d prefer on the floor.

It depends on your aesthetic. I quite like it and certainly wouldn't totally remove it, but it depends on several things. It would look good with black windows or pure white windows but not convinced it would work with oak windows. If, however you want oak windows and like that look, then it may be that stoney colours are your thing. Does this make sense?

Looking at your photos, although this is a great space and a lovely shape, the proportions look a bit ‘off’ - the ceiling seems too high for the width of the room. I would paint the ceiling and normally I would be in the ‘paint the ceiling white camp’ but in this case I wonder whether a darker colour , maybe a deep blue, would help rebalance the space. I’d also be cautious about wood effect PVC windows - like rosewood effect I think they may date quickly.
