Hi Cindi and thanks so much for your kind words! These pendants are hung 36" above the countertop to the bottom of the pendant. Usually, that would be 72" above the finished floor, but in this case, it is 75" above the finished floor because the higher portion of the kitchen island is 39" tall (instead of a standard base cabinet height of 36"). These are 12' ceilings. The size of the fixture and the ceiling height will also determine how high to hang your lighting fixtures in your exact situation, but 36" above the table top/island top is a good basic rule of thumb. Yes, helps immensely. My kitchen mimics yours, 12' ceiling with an 11' island. The countertop also sits higher than normal, 38" AFF. My three pendants are similar in scale too. I think 75" AFF may be a good place to start! Again, thank you for your information and speedy reply.
