I'm not sure. Its a very very rustic style. Modern style mantels to go with your woodburner are usually just a clean piece of oak, very simple. If you showed as more of the room my advice might change.
I am waiting on the plasters at the minute just got paster board up going to get it painted plus getting shelves built either side of the fire place. Then would I just be better getting a plain mantel
Oak shelving always looks timeless and classy. That said painted MDF can look great too. Do lots of research on Houzz, there is an article about built in shelving today. Personal preference. I would be tempted to go for floating shelves in oak to match the mantel.
A simple oak shelf the full width of your chimney breast would look great. Are you planning to remove your tv from above the fire place and put it on the unit on the right in the photo?
Nice piece of oak would look very smart. Of course you could paint the current rustic one if budget was tight. Shelving can be natural wood or painted, whatever you prefer. Both are lovely.
