We want to cut the sides of our kitchen countertop so we can get rid of the gaps and add a bigger oven to fill the space. We are fairly certain it's laminate material. Does anyone know if this will be possible without damaging or removing the rest of the countertop? What type of workman should we reach out to to do it?
That is laminate. If you can’t do it yourself then you need a kitchen fitter, carpenter or joiner. If you want it done in situ that they would need to use a router and even then they would have difficulty reaching to the end. Ideally the worktop needs to come out to do it. Make sure you can get a cooker to fit the gap before venturing further as they tend to be standard sizes.
I see you have the old fashioned metal joining strips, so it would be possible to remove each section of worktop over the 150 units. You will also need to run a stanley knife through the silicon under the tiles. Once you have your oven in place, simply measure how much you want to cut off and then use a circular saw with a fine tooth blade, clamp a straight edge to the worktop so you have a straight cut, cut with good side down and always into the bullnose. You already have metal end caps so refit those. Have a practice first if you've never used a circular saw and when you measure you need to allow for the blade thickness and set the blade depth correctly as well. Plenty of instructions on you tube.
