Fixing Victorian Style fireplaces

Hi
I need advice/help before it gets silly cold for winter. I have three fireplaces altogether (two downstairs and one in the upstairs bedroom) I’ve just had a chimney sweep for them all but he took out the insulation for the flute. Now it’s letting in a cold breeze.
So I think I need to sort out two things.
I noticed the downstairs fireplaces have no cap. And also blocking the flute.
Is there any professionals on this site that can assist and are available ASAP (I have a 3 month old baby and I want to make sure we’re not super cold downstairs)
