Are the flooring and window treatment changing? What color are the walls? Is this an open concept space where other rooms can be seen from it? If so, what colors are in those rooms? May we see photos of the entire room - all walls and furniture you plan to use? That will help us determine what granite and backsplash will work with all of it.
HI -- I know you only asked about granite and backsplash but granite is expensive and I worry it is a waste of money putting it on old cabinets . I also question the kitchen layout too. Perhaps doing more of a remodel will justify the cost of putting granite in.
I would not advise putting granite on these older cabinets. 180FX laminate with the ideal bullnose edge will fool any non professional. Save till you can do it right. (I love the vintage look of the cabinets)
I think your kitchen is awesome as it is. I really dig that pink tile and the funky old cabinets. I'm not saying you shouldn't change it---just that I think it's pretty nifty.
