Draw the plan out of graph paper, to scale, and carry out a few exercises on tracing paper.
A good kitchen designer will help with layout, and may even provide 3D visualisations.
Doors always take up space...consider removing them and even walls. If you are looking to remodel the building itself consider using a qualified architect who will help guide you through the entire process. Even a mall extension (1 or 2 metres out) can significantly increase the size of a room. You may also require engineers calculations. How many to eat ? How often ? Any area elsewhere you can liberate and use for extra storage or as a breakfast nook or space for fold down table etc ?
The smallest kitchens are the ones that require the most innovation !

If you can't get that one to one time with someone for free in a busy showroom - then perhaps consider hiring an independent designer (like me!) working with you to get results that suit the room - but also suit you !!!
Most kitchen companies will offer a discount when you rock up with your own set of plans - as 1. It means you are a genuine buyer -not just come on out of the rain 2. It saves them time and travel 3. They know you will be shopping around so they need to give you their best price to be in with a chance of securing your business !
Completely agree with one plan, we are one of those kitchen companies Oneplan mentions that will give a customer a keen price on the supply or supply and installation of a kitchen that has been designed properly by an independent kitchen designer. All we really need to do is choose finishes etc. with the customer, go round do a check measure and overall saves us a lot of time.
