Here's one we did for a client. Given the location of your sink, you could install one in the island but make sure that it is not directly behind the sink. The cabinet for this pullout trash/recycle is 18" wide.

rpwoodard, that is not my kitchen, but I have the same MW. We also had it in our previous kitchen with the trim kit. Now it just sits behind a lift up door where I have space to keep the splash guard on top of the MW and pot holders next to it. This size has always been sufficient for our needs. If it breaks, it is easily replaced. This upper is 15" deep. https://products.geappliances.com/appliance/gea-specs/PEM31SFSS

If you are going to go to that trouble, look at DuraSupreme. You can get it with the BLUM Metabox, already assembled, and much better quality finishes. There’s also 1000’s more customization options.

Sorry I haven't read all the comments. I've downsized the working triangle. And somewhat lined up cabinets and aisles with doorways and wall corners. Style and colors in this floorplan were default, nevermind these. A) Dog bowls. And your pantry, with a bit of countertop to make unloading groceries easier. B) Dishwasher. Perhaps add another next to the other sink. This side of the kitchen would be ideal for plates, mugs, glasses, etc. Fridge freezer near range, on the 'storage side'. And micro+oven+platewarmer on the 'dish' side. Lots or drawers for pans, cutlery and small appliances near the range and in the island. Two 36" drawers cabinets next to 4 seats on the dining side of the island.

I would want a section with a counter with plug-ins. For example, I don't use my microwave much so I'd put it in there. I would also use that counter for putting down grocery bags when I unload into the pantry. Have you done a search here for pantries? There are many amazing ones. [This article has a great selection of 80 different pantries to choose from.[(https://www.houzz.com/magazine/photo-flip-80-pretty-and-practical-pantries-stsetivw-vs~51805181) They are very different in size, style, type of shelving and counters, and the types of items stored. You should be able to glean a lot of good ideas by taking a look.

backyardfeast (love your user name, by the way!), if you haven't ordered kitchen cabinets yet, I suggest you skip pullouts in favor of drawers. They are easier to use (one step instead of two), which makes them more useful. That said, I was going to suggest pullouts in your pantry - later. If you are at all handy, you can build Blum metaboxes or tandemboxes. Put shelves in now, and replace with pullouts in the future. Using the space for a while will help you determine exactly what sizes you need, which will save money (and/or make the space more efficient) in the long run.

I would definitely put a spice rack on the back of the door I would have it take up as much of the door as possible and preferably have it hold at least two rows of spices. Do not forget the door swing. The door must be able to open far enough that if you had pull-out shelves in the pantry, you could still pull them out without the spice racks impeding the door swing. I would have pullout drawers to counter height. At counter height I would store the large countertop appliances and above them I would put narrower open shelving-probably 12 to 18 inches deep, not the full 24 inch depth as you would not want to hit your head on it as you're pulling the countertop appliances out of the cupboard to use. Overhead I would put horizontal brackets to hold the big cookie sheets, extra paper towels, etc. Depending upon where the door is and where the cupboard is located in your kitchen, and whether you own one of those really heavy mixers, you may want to have part of the counter top pull out-such that you just pull the mixer forward when you want to use it and slide it back into the pantry when you're done-so that you don't have to lift it.
