Hi! I just had an opportunity to visit the Santa Monica showroom in California. After my visit, I have decided to get the Chagny 1400. I was worried abotu all the same things and brought every big pan and cookie sheet that I use. The "Cluny" ovens (thats what that size oven is called regardless of the range it is on) fit everything just fine. The cookie sheet works, my giant All Clad roaster fist perfectly, and so does my giant round braiser. The warming cupboard, as mentioned by Heather in Oregon, will not fit a regualr cookie sheet, but it only goes up to 250 so no cookies going in that oven. However, I will be using it as a proofing oven since it goes to 80 degrees and I will be doing all of my slow braising there. I can imagine leaving my Bolognese sauce in there safely for 12 hours or more or doing long slow cooks of meats, duck confit and other confits, etc. The petite finishing oven will be used to bake caseroles and gratins and then at the end flipped to the broier to finish off or when throwing on crunchy toppings that need a final toasting. I can imagine that creme brulee and the like can get a crunch top too if you don't use a torch (I'm a torch guy :-) ) I was very please with how everything fits. You won't have to buy new pans. If my giant pans fit, I can't imagine much that won't. Of course a full sheet pan won't fit, but I've never used a full sheet pan except when I worked for a caterer 20 years ago. And unless you have a need for enormous batches of cookies on full sheet pans, I think you won't ever think anout a bigger oven. We considered the Sully, but I want the warming oven too much because of the ability to use it as a proofing oven since I bake 1 or 2 times a week. I'm placing my order this week: Chagny 1400, Anthrocite, Brass knobs, Classique top with the french plate additon on the side. Now, I only have to wait a year to get it!!! Ok,,, they did say 11 1/2 months so technically not a full year :-)
