LEDs are going to be your best bet. Incandescents get got and are the most inefficient. Fluorescents have mercury and can be bulky.
I made my own LED fixtures and hard wired them so they turn on with wall switches. They're aluminum with a plastic diffuser cover. The downside is that you have to hide a transformer somewhere, like in a cabinet. Here's a pic of a couple I made, along with the transformer for my coffee station in my kitchen.
