The wood is a clear Poplar 1x10. It is not a v-groove, which is typically tongue and groove. The boards have a rabbeted edge to them and the gap between the boards is the width of 2 nickels. You can accomplish thislook using t&g as well by having the wood milled with the tongue 1/8" longer than the groove.
