30” cooktop in relation to sink (but your sink would be 30” wide). This proximity makes me suggest that no pot filler is required. Notice size of cabinets immediately flanking the hood and the hood detail.

There would be room to do a wall of storage in the dining room that is shallow like this if you wanted to go with a 42" round table for 5 people (like the original plan A)....

Scale of sink to cook top and how to detail backsplash (and maybe consider open shelves on either side of hood?) If you like this look then maybe close in the open knee space under the large window for more closed storage. Although I like the work spot under the big window....

This is just to show styling the banquette area....accent wall with color, art and sconces behind seating would work well in your condition. Seating against the wall could be custom built or store bought straight run components that fill that space

I wish we had space to do something like this with the island but you don't have enough depth to do the space where the 2 chairs are. Just at the ends.
