If it was done properly there is a good chance only the floor would need to be ripped out. Provided the waterproofing is not tore up in the process.

You can try a grout stain. But the grout is likely to wash out over time. It really should be redone. As in, the whole shower.

The grout spacing on penny tile is too wide to be able to use unsanded grout. It needed sanded grout so it wouldn’t shrink and discolor as it dried because it was applied too thickly because of the wide grout lines.
