How to level floor/finish wall?

Hi everyone, I'm a DIY novice so am looking for some advice if you have a moment please. In the photo below we have ripped out an old sink unit and replastered. I have a show bench that will fit exactly, but I want to know how I finish the walls (the gap between the floor and wall) without skirting boards? (The skirting will make the bench not fit!). Also, what would you put underneath it where the tiles stop as it is uneven and the concrete of the foundations. Thanks so much. Keen to learn!
