Help/ideas needed for Kitchen layout

We have just moved into the house and the downstairs layout is annoying me. I don't like that to get into the living room you have to go through the kitchen. I have also always wanted an open plan kitchen dining space as it always seemed more sociable and family orientated, I liked the idea of having a kitchen island/ a breakfast bar. The house has had a downstairs extension, so there is an additional bedroom with an en suite along with an extra room at the back of the house (which is currently empty) the rooms at the back of the house have bifolding doors that open to the garden. In an idea world I would have a kitchen dining space that could utilise the bifolding doors but I think this would be too much work. I have had a quote and a plan drawn up for removing the wall between the kitchen and dining room, closing up the door to the kitchen and adding a door to the living room however it doesn't really create more space as it gets rid of all the double wall units from the galley style kitchen. I was also told there wouldn't be enough space for a small island and a dining table. I feel a bit stuck and wondering if the current layout is just the most functional and maybe I'll get used to it with time?
