Fitting kitchen in loft slopes? Any ideas?

Our loft apt is quite nice living kitchen wise but the only place a sofa can go is in front of the peninsula.
One we just bought which isn't huge, could potentially be danerous if someone stood up too quickly as the beam is v low.
The kitchen has lots of lower cuoboards and no wall ones which we think is a bit of a waste of space so thinking of redesigning it so that the kitchen part could go more across the eaves so giving us more open lounge area.
The little return where the cooker is next to the main entrance is stud so could also be removed.
Has anyone got any good ideas for this space? It's only a one bed place so doesn't need such a huge kitchen ie if we can put some on the walls then that would mean less floor space used.
Plus it takes up most of the head height in the room!
The white/brown pic is something I found online but not sure if our eaves are too deep for it to work.
The grey room is our current space but I will get a better picture when I get back home shortly. It also has a dining area to the other side
