Restoring Victorian fireplace

We are about to start redecorating the main bedroom in our Victorian terrace which includes restoring the fireplace.
It had layers of gloss paint on it when we moved in which we have stripped off and we want to restore it back to matt black - what would be the best way to go about doing this?
I am also wondering if the grey tiles on the sides are original? They are plain but i am keen to keep as many of the original features as possible - our bed frame is dove grey so it does match quite nicely how they are. We will be removing the blue-tiled hearth though and we would like to replace this with something plain black (not shiny/polished as some seem to be), any suggestions for what we could use would be welcome.
We will be painting the room white, and restoring the floorboards that were under the laminate.
