Skim vs sheetrock

Hi. We have moved into a 1950s house that has wallpaper everywhere. We want to remove the wallpaper and paint it instead. There area areas of uneven contour beneath the wallpaper. We have been given advice for both skim plastering and sheetrock. We are wondering which is better. It seems the sheetrock will be quicker but we are concerned re thickness etc we dont want to add to the thickness of the walls and would rather it be good than quick.
