the rear extension of my house will have black sliding doors, minimal frame (20cm), cortizo. given the back will be rendered all white and im having the loft put in, would you recommend white or black windows? the dormer will be tiled (brown).

both can be a great options depending on the style you are going for. But we lean towards black - to keep consistent.

No window treatments are going to give "total darkness" Anyone who sells you something and says it will is a liar. Even the best blackout shades installed with side channels will block (maybe) 90% of the light coming in a window. Call a local professional to come out to your home with samples to look at. Best options will probably be a double-cell honeycomb shade or a roller shade.

It is hard to comment on your specific room without knowing the size and how much natural light gets into the room. However, most black and white murals I have seen have all the remaining walls white. This can look a little bland and stark though, so you could consider something bolder in terms of block colours in your son's favourites. Primary colours would also work well.
