I've recently been granted permission for a rear / side extension, a by product of this is a new open plan area. My question is where to place the kitchen should I put this in the middle to create a clear separation between the dinning and living space or at the back to maximise the space. What do you suggest?
I think it depends how you use the space. As a designer we ask a lot of questions from in a briefing session - this helps us to understand your needs to create layouts for you. I think this layout looks great in terms of lighting and how much 'kitchen' you get. This will then allow for seating and dining which both connect to the kitchen space. The kitchen space being the heart of the house.
At the back of the house you may gain a large area in the front but you will need to walk through both to get to the kitchen and you will be using some of that light and any views on an area you don't sit and enjoy it. Once of the spaces then also won't be connected to the kitchen so you will end up with a thoroughfare.

I think you should be considering if the bedroom and ensuite are in the best place. Would it be better to put the kitchen in that space and make the kitchen on this plan into a living room. Presumably this would free up a room elsewhere for that bedroom
