Sustainable wood worktops

I'm having real trouble sourcing a sustainable breakfast bar worktop of the correct thickness. We've got a carrera worktop, and have a planned wooden section as the breakfast bar. None of the high st kitchen companies seem to have sustainable wood options, and I an only find reclaimed wooden worktops that are a max if 2.7cm thick. Bespoke kitchen companies who use sustainable wood will only supply worktops as a part of a whole kitchen fit.
I really don't want to have an unsustainably sourced piece of worktop, it seems mad that I'd even have to, there must be a solution. Any help gratefully received!
Our carpenter / fitter would fit it for us. Delivery would be to Surrey, postcode KT10.
