Width of wood floor and colour

Hello, we are renovating our house and had planned to restore the old, pitched pine floor boards but too many of them were damaged when we pulled them up to install insulation. We are now looking to install new wood floor throughout the ground floor. The old boards were 120mm in width and they are in keeping with the Arts & Crafts style of the house. I thought that I would go with 150mm wide but I am being told that 190mm is currently in fashion. The second question is that I fell in love with American walnut for the wood but it is too expensive - does anyone have suggestions as to how I can achieve this colour with an oak floor? Thanks for your help!
